Bresse chicken is the only one that benefits from an A.O.C. (appellation d'origine contrôlée): this label is merited by the observance of very strict rules that define both the breed of the chicken and the conditions in which it is reared, along with its production area.
The refined flavour and the immensely tender and juicy structure of this chicken are incomparable. And there is more than one reason behind this secret...
At Le Devant farm, the chickens are reared in the open air, in vast green pastures, which are left fallow after 6 months so that the land has time to regenerate in order to provide the chickens with all of the nutrients they require, such as worms, molluscs, animalcules, etc.
This natural food is complemented by maize, corn and dairy products.
An area in excess of 10m² is allowed for each chicken, plust a vast coop where they can shelter at night or in bad weather.
Moreover, the slaughter conditions remain a major concern for the farm: the abattoir has been installed at the very heart of the farm and the chickens are taken there without stress.
Le Devant farm therefore guarantees overall conditions of rearing, feeding and slaughter that ensure Bresse chickens have a happier life than those of their battery-farmed companions, and which will imbue them with all the qualities of taste and flavour that make an exceptional product.
